Our pigments
The metabolic origin of pigments varies widely. Some are synthesized by the animals themselves, frequently within the pigmented cells. Others, in particular carotenoids such as canthaxanthin, lutein and zeaxanthin, are of dietary origin (only plants can synthesize these compounds, and they undergo only minor chemical transformations in animals, which accumulate them). This accumulation is particularly easy to detect; it is used, for example, to colour the flesh of farmed salmon pink.
